Chocolate Melting Puddings

I'm back today with a recipe! Yesterday evening I suddenly felt inspired to make some chocolate melting puddings and I decided to share the recipe here because they were delicious. They have a rich and decadent flavour and are cakey on the outside with a gooey centre. They are a great alternative to Christmas pudding if you, like me, are not a big fan of fruit cake. The best bit is, you can make them in advance and leave them in the fridge until you need to bake them. If baking from chilled, you will need to give them a few more minutes in the oven. I like to serve these with vanilla ice cream but if you want to impress your friends, you could make a simple chocolate sauce or serve with some fresh raspberries too.

Chocolate Melting Puddings- serves 6
Ingredients
- 140g unsalted butter
- 140g dark chocolate, roughly chopped
- 3 eggs, plus 3 egg yolks
- 85g golden caster sugar
- 25g plain flour, plus 1 tbsp
- Vanilla ice cream to serve
Method
- Preheat the oven to 200 degrees Celsius. Butter six pudding moulds and dust with the tablespoon of flour. Sit them on the baking sheet
- Put the butter and the chocolate into a heatproof bowl over a pan of simmering water. Stir occasionally until melted and then take off the heat
- Whisk together the eggs, egg yolks and sugar for about 3 minutes until they have increased in volume and are pale
- Reduce the speed and whisk in the chocolate mixture. Gently fold in the flour, being careful not to lose too much of the air you have just folded in
- Divide the mixture between the moulds and bake for 9-11 minutes until risen but not quite firm
- Loosen the edges with a round-bladed knife and turn out. Serve with ice cream or pouring cream
I would really recommend making these chocolate puddings- they are divine!

In early Victorian times, mince pies were made from actual meat! It was only later on that fruit and spices were used, like they are today.
